Hunting new food--Basa Fish

It has been a month since I came to Toronto. Everytime I walked into supermarkets or restaurants, there's always something new jumps to my eyes. And I feel so excited when tasting all these new food. Yesterday I decided to buy a fish which I have never cooked and tasted before and its name is Basa Fish. The reason that I chose Basa Fish is it was recommended by my cousin and I invited my friend Raine come to enjoy the dish together.
Here's my recipe:
Basa fish 300g
cilantro 10g
ginger 5g
garlic 5g
chilli 5g
light soy sauce 2 teaspoon
dark soy sauce 1 teaspoon
granulated sugar 1/2 teaspoon
cornstarch 1/2 teaspoon
water 3 teaspoon
corn oil 5ml(approximately)
Step1. Unfrozen basa fish and cut into three parts when it gets soft.
Step2. Pick and wash cilantro and chilli, place on a cutting board and chop finely.
Step3. Peel skin of ginger and garlic, chop finely.
Step4. Turn heat up to high, add oil into the pan, add ginger and garlic when you feel the oil get warm. (hand upon the pan)
Step5. Add fish gently, turn heat down a little bit, turn around the fish after approximately 2 minutes.
Step6. Add cornstarch, sugar, light soy sauce and water into a bowl and mix, season with this sauce after 1 minute.
Step7. Add chilli,cilantro and season with dark soy sauce after 40s.
Done!!

During cooking, the fish smells a bit umame and it tastes much more umame after cooked. Raine thinks it's just fine seasoning however I felt a bit salty. The taste of Basa fish is kind of like codfish because it's almost equally soft. Besides, the smell and flavour of cilantro works out with Basa fish. Since we both like spicy food, a little chillis help to make the fish more palatable. In the end, we finished the fish completely and enjoyably.
Another friend of mine, Alex, recommended me to cook Basa fish with corn soup which is really delicious and I'll try it next time. It seems a perfect neutral that could match with different food in different ways and I can't wait to try! It's so amazing that one kind of fish could made so many possibilities. But next time I'll certainly season it with less salt.
